Sweet potato slips are growing

I am so pleased, SweetPea. My sweet potato started growing. It’s producing shoots (better known as slips) which means I can try my hand at sweet potato growing this 2023 season.

I haven’t given sweet potato gardening a good try. I did attempt growing some one summer long ago, mostly as an experiment. There wasn’t a success. Nothing more than 3cm in length. This year, I plan on growing for a proper crop.

Why sweet potato? Who doesn’t like sweet potato? I love it. When I heard it has a lovely balance of sugars and fibre plus having a low glycemic index, I was hooked. You see, on August 31, 2022, I was given the news I have Type 2 diabetes.

The diagnosis came with challenges. But it also came with a better understanding of food. Some food things I thought were okay/good were in fact so terribly full of sugar. Oh and I discovered fibre is your friend.

Which takes me back to sweet potatoes. Although they have sugars, they are also high in fibre. More importantly, they have a lower glycemic index. In plainer language, when I eat cooked sweet potatoes, I won’t get a rush of sugars pumped into my blood stream. It’s a slow release. In my case, slow enough for my body to use.

Besides, sweet potatoes taste so much better in a curry. Adding spice to the sweet, I think it’s an amazing taste combo.
